Let's take a closer look at the different kinds of pistachio nuts worldwide, with a particular focus on the varieties found in Greece.
1. California Pistachios:
California, United States, is one of the largest producers of pistachio nuts in the world. The primary variety grown in California is the Kerman pistachio, known for its large size, tan shell, and vibrant green kernel.
2. Iranian Pistachios:
Iran has a long history of pistachio cultivation. The two main Iranian varieties are the Kalleh Ghuchi and the Akbari. The Kalleh Ghuchi pistachio is known for its elongated shape, dark shell, while the Akbari pistachio is larger, with a larger opening and resembles the Greek Aegina pistachio.

3. Turkish Pistachios:
Turkish pistachios come in various varieties, including the Antep and Siirt. The Antep pistachio, also known as the Gaziantep or Antepfıstığı. Siirt pistachios are smaller in size and have a slightly sweet taste.

Greece is renowned for its high-quality pistachios. The diverse varieties of pistachio nuts found in Greece offer a captivating array of flavors, textures, and visual delights. The unique climatic and soil conditions in Greece contribute to a slightly different taste profile. Greek pistachios stand out for their exceptional sweetness, distinctive aroma and vivid green colour.
Greek pistachios are best known for the Aegina pistachio variety (PDO). They are slightly smaller in size with a light color shell and their intense bright green and deep red colour dominates the interior. The tree blossoms mainly in early April and reaches its maturity at the end of August when the harvest period begins.
Also, there is the Pontikis variety which seems to be similar to those grown in California. This particular variety came from the selection of pistachio seedlings from the Aegina variety conducted by the professor of arboriculture Mr. Konstantinos Pontikis. In fact, this variety was named after him. These pistachios are larger in size and have a white-beige shell. The kernel has a very bright intense green colour, which makes them very appealing in combination with red-purple shades in the casing. Its growth is considered to be later than the pistachio of the Aegina variety as it blossoms around the end of April and reaches maturity in mid-September.
Fact: Pontikis pistachios are ideal to be eaten roasted, as during the roasting process they release a unique pink colour on the inside.
